It’s late. Everyone is hungry.  You want a healthy and tasty meal without calling for take-out. I’d like to help.

HOW IT WORKS

di Brama is my personal chef service starting this winter.  I will prepare a week’s worth of meals with fresh ingredients cooked simply and dressed lightly to bring out flavor.

I work with you to identify your food preferences and then create meal plans that fit your preferences and dietary needs.

I will do the shopping and then prepare the meals in your kitchen. I will leave your kitchen cleaner than I found it.

The finished meals are packaged and labeled to fill your refrigerator and freezer full of delicious meals with thawing and re-heating instructions.

Details

The cost for a standard service of 5 meals of 4 servings is $400 plus the cost of groceries. The service will run from December 2016 through March of 2017. 

A typical meal will include:

  1.     a serving of salad or soup
  2.     a serving of meat, fish, or pasta
  3.     a serving of side veg or grains

I offer optional add-ons including:

  • desserts,
  • breakfast meals,
  • extra servings,
  •  all-organic,
  •  all-local meats,
  • all-vegetarian,
  • gluten-free,
  • wood-fired oven baked bread,
  • and child friendly preparation

A subscription of meals may be purchased weekly or bi-weekly.  Cancel at anytime

Soups

Tomato soup
Smoked roasted tomato soup with garlicky croutons

Mushroom soup
Mushroom soup with parsley, shallot, and a splash of sherry vinegar

White bean & Kale
White bean pureé and kale with garlicky gremolota 

Chicken soup
A velouté of chicken broth with shredded chicken and mini dumplings.  Simple and satisfying.

Meat & Seafood 

Roast Chicken
Brined and roasted chicken with lemony sauce

Roast Lamb
Lamb with lemon-butter, agro dolce cipollini, sautéed collards, and minty salsa verde

Meatball & Polenta
Meatball from meat raised on Rocklands Farm with tomato sauce polenta or sautéed greens

Osso buco 
Braised beef with a tomato pan sauce and gremolata 

Scallops Gratin
Scallops are baked with butter, garlic, shallot, fresh parsley, tarragon, lemon, and breadcrumbs.

Shrimp & Rice
Shrimp flavored with creole seasoning (paprika, dried oregano, black pepper, dried basil, cayenne pepper, granulated onion, dried thyme, granulated garlic) served over rice, pasta, or other grain of your choice.  Topped with a little cheese.

Puttanesca
Taglitelle sautéed in olive oil with parsley, garlic, capers, anchoive, and olives

Winter Ravioli
Raviolis stuffed with butternut squash

Agnoloti
Stuffed with sautéed greens, ricotta and Parmesan. 

Rigatoni
With a meat ragú of onion, celery, carrot, ground meat of your choice, tomato paste, chicken stock, and a bit of knob of butter.

Linguini 
Dressed with roasted garlic puree, olive oil, and bread crumbs, garnished with parsley.

Roasted cauliflower
with garlic, hot pepper, olive oiled, shaved pickled red onion and celery.

Beets
with orange segments, basil-walnut pesto, sherry vinegar, sliced onion, toasted walnuts, and castelvetrano olives

Carrots
with smoked paprika, sherry, parsley, and pecorino

Green beans
with cannellini beans, lemon basil vinaigrette, shaved picked red onion, and celery

Broccoli
with garlic, cumin, sautéed onion, sherry vinaigrette, pecorino
